Since the MP3 patch is no longer available for Cubase (except Cubase Studio 4) here are instructions for using iTunes to convert your projects to MP3.
1. Download iTunes for Free from Apple's website.
2. Export your project out of Cubase as a .wav or a .aiff file. For info on exporting out of Cubase read this.
3. Bring the file into iTunes (you can drag and drop it into iTunes, or go to "File" -> "Import").
4. In iTunes go to the preferences and go into the "Advanced" tab, then the "Importing" tab. (note: in iTunes 8, you go to Preferences, the 'General' tab, click on "Import Settings"). Choose MP3 where it says "Import Using" and set the quality the way you like it. You will notice there are many quality settings which have a direct correlation with the file size...higher quality means a larger file.
5. Now select the file (that you exported from Cubase) in the iTunes Music Library and go to the "Advanced" menu. Select "Convert Selection to MP3". That's it!
Once you have the settings dialed in in iTunes' preferences, you may skip step 4. Also, if you right click in the info bar of iTunes you can tell it to display several useful bits of information including file size, file type, and more.
Have fun.
